A Salad For Salad Haters


I'm not quite sure why I've named this a salad for salad haters because it is still a salad so if you actually hate salad it might not be for you, but what I mean is a salad for people like me who find it a little boring and not as tasty as pizza (before you get any ideas, this salad still doesn't beat pizza). This is one I made in Glasgow while visiting my friend and I'm pretty proud we made salad when we usually make pasta (although we did have beans on toast the next night to compensate).

So, after really not bigging up this salad let's get into what's in it shall we?

Ingredients:

Spinach
Cucumber 
Sweet red pepper
Sweetcorn
Avocado
Goats cheese
Sunflower seeds
Pumpkin seeds
Olive oil
Balsamic vinegar

I haven't put amounts because people like different amounts of different things, plus I probably do it differently every day! It's nicest if the goats cheese is warm, but I usually take it to work with me so I have to make do with it cold, which is still pretty darn tasty. It's just that little bit more interesting than other salads (probably because it's got absolutely everything you could think of in it) and I haven't got bored of it yet, which is usually what happens with me and salad unfortunately.

  2. Sounds perfect, I love when salads have loads of ingredients and the great thing about them is that you can mix pretty much everything you love and it will always taste great! But of course, nothing beats pizza and pasta, they're my favourite dishes ever! :)

  7. I'm not a huge salad lover but this looks yummy!! I love adding seeds and nuts to salads! My favourite is adding pine nuts :) but yes nothing beats a Pizza haha xxx

  10. Ooo I love that this has goats cheese in it! I don't know if it counts as a full on salad but I love making pumpkin salad with roasted pumpkins, feta cheese, red wine vinegar, olive oil and roasted onions and then you just toss it all in a bowl and pop it in the fridge- it tastes so good!
